Global 40th Anniversary Kiritsuke Knife 15cm: GS-110AN
The newest addition to the Global family is the GS-110, a small 15cm Kiritsuke Knife. Traditionally, Kiritsuke knives are much larger, often over 24cm in length, and are used by Japanese head chefs as multipurpose slicing knives. They typically feature very straight blades similar to Japanese Usuba vegetable knives, combined with the length of a Yanagiba knife. Due to their challenging nature, they are usually reserved for the most skilled Japanese chefs as a symbol of status.
Our smaller Kiritsuke, the GS-110, pays homage to this traditional knife with a slightly curved blade that aids in general cutting tasks, functioning effectively as a small chef's or cook's knife. The GS-110AN model is featured in all special edition 40th anniversary sets.
Traditionally, many Japanese knife manufacturers produced specialist knives with single-side grinding known as “Kiritsuke”. These knives required considerable skill to use effectively, and in many Japanese restaurants, only the head chef was allowed to wield one. The Kiritsuke Knife thus became a symbol of expertise, status, and seniority.
Drawing from this tradition, Global® Knives engineered a Double-Edged version of the Kiritsuke in their Classic series, creating a highly versatile knife capable of performing tasks typically handled by a Gyuto or Chef’s Knife, as well as those of a Nakiri and Sujihiki. It features less curvature than the typical Gyuto, making it less suited for “rocking action chopping” but perfect for a “push and pull” cutting motion. The blade's tip is particularly adept for fine dicing and chopping.
